A hearty and flavorful beef taco soup, perfect for a slow cooker meal. This recipe combines tender beef with classic taco seasonings for a comforting and delicious soup.

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 1 (8 ounce) can tomato sauce
- 1 packet taco seasoning
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional)
- 4 cups beef broth
- Optional toppings: shredded cheese, sour cream, chopped cilantro, crushed tortilla chips
Instructions
- In a large pot or Dutch oven, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the kidney beans, black beans, diced tomatoes, Rotel, and tomato sauce.
- Add the taco seasoning, chili powder, cumin, and cayenne pepper (if using). Stir well to combine.
- Pour in the beef broth and bring the soup to a simmer.
- Reduce heat to low, cover, and let it simmer for at least 30 minutes, or up to several hours, to allow the flavors to meld. Stir occasionally.
- Serve hot, garnished with your favorite toppings.
Notes
- For a spicier soup, add more cayenne pepper or a jalapeño pepper.
- This soup freezes well. Let it cool completely before freezing.
