  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the Italian sausage in a large skillet over medium-high heat until browned. Drain off any excess grease.
  2. Add olive oil to the skillet. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the crushed tomatoes, orzo pasta, chicken broth, oregano, and basil.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the orzo is tender and most of the liquid has been absorbed. Stir occasionally.
  6. Season with salt and black pepper to taste.
  7. Stir in the Parmesan cheese.
  8. Garnish with fresh parsley before serving.
