- 1 pound Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 cup orzo pasta
- 3 cups chicken broth
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
- Cook the Italian sausage in a large skillet over medium-high heat until browned. Drain off any excess grease.
- Add olive oil to the skillet. Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Pour in the crushed tomatoes, orzo pasta, chicken broth, oregano, and basil.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the orzo is tender and most of the liquid has been absorbed. Stir occasionally.
- Season with salt and black pepper to taste.
- Stir in the Parmesan cheese.
- Garnish with fresh parsley before serving.
Notes
- For a spicier dish, use hot Italian sausage.
- You can add other vegetables like bell peppers or spinach.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
