Ingredients

  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet.
  2. Add sausage and cook until browned.
  3. Add onion and bell pepper; cook until softened.
  4. Stir in garlic, rice, and Cajun seasoning.
  5. Pour in chicken broth, season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer until rice is cooked.
  7. Serve hot.
