Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1.5 cups water
  • 1 cup long-grain rice
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, chopped tomatoes, avocado, cilantro

Instructions

  1. Brown ground beef in a skillet. Drain off any grease.
  2. Add onion and cook until softened.
  3. Stir in taco seasoning and water. Bring to a boil.
  4. Add rice and black beans. Reduce heat and simmer, covered, for 15-20 minutes, or until rice is cooked.
  5. Stir in salsa.
  6. Top with cheese and cook until melted.
  7. Serve with your favorite toppings.
