Ingredients

- 1 pound bowtie pasta
- 1.5 pounds chicken breasts, cut into bite-sized pieces
- 1 head broccoli, cut into florets
- 1/2 cup cowboy butter (recipe below)
- Salt and pepper to taste
- Grated parmesan cheese for garnish
Cowboy Butter:
- 1/2 cup (1 stick) unsalted butter, softened
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
Instructions
- Cook pasta according to package directions.
- While pasta cooks, prepare cowboy butter: Mix all cowboy butter ingredients in a bowl.
- Season chicken with salt and pepper. Cook in a pan until browned.
- Add broccoli to the pan and cook until tender-crisp.
- Stir in cowboy butter until melted and combined.
- Add cooked pasta to the pan and toss to coat.
- Serve immediately, garnished with parmesan cheese.
