Ingredients

  • 1 pound bowtie pasta
  • 1.5 pounds chicken breasts, cut into bite-sized pieces
  • 1 head broccoli, cut into florets
  • 1/2 cup cowboy butter (recipe below)
  • Salt and pepper to taste
  • Grated parmesan cheese for garnish

Cowboy Butter:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions.
  2. While pasta cooks, prepare cowboy butter: Mix all cowboy butter ingredients in a bowl.
  3. Season chicken with salt and pepper. Cook in a pan until browned.
  4. Add broccoli to the pan and cook until tender-crisp.
  5. Stir in cowboy butter until melted and combined.
  6. Add cooked pasta to the pan and toss to coat.
  7. Serve immediately, garnished with parmesan cheese.
