Ingredients

  • 1 pound bowtie pasta
  • 1 pound chicken breasts, cut into bite-sized pieces
  • 1 head broccoli, cut into florets
  • 1/2 cup Cowboy Butter (recipe below)
  • 1/4 cup lemon juice
  • Salt and pepper to taste
  • Optional: Red pepper flakes for heat

Cowboy Butter:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (or to taste)
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta cooks, prepare Cowboy Butter. In a bowl, combine softened butter, minced garlic, parsley, chives, smoked paprika, garlic powder, cayenne pepper, salt, and pepper. Mix well.
  3. Cook chicken in a skillet over medium-high heat until cooked through. Season with salt and pepper.
  4. Add broccoli florets to the skillet and cook until tender-crisp.
  5. Add Cowboy Butter and lemon juice to the skillet with the chicken and broccoli. Stir until the butter is melted and the sauce is creamy.
  6. Add cooked pasta to the skillet and toss to combine. Season with salt, pepper, and red pepper flakes (if using).
  7. Serve immediately.
