Ingredients

  • 1 tablespoon olive oil
  • 1 cup wild rice, rinsed
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1/2 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add wild rice, onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and add thyme, rosemary, and black pepper.
  5. Bring the soup to a boil, then reduce heat, cover, and simmer for 45-60 minutes, or until the wild rice is tender.
  6. Season with salt to taste.
  7. Stir in fresh parsley just before serving.

Notes

  • For a thicker soup, you can mash some of the cooked rice against the side of the pot.
  • Add cooked mushrooms or cubed tofu for extra protein.
  • This soup can be made in a slow cooker. Combine all ingredients except parsley in a slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. Stir in parsley before serving.
