Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Optional toppings: avocado, sour cream, cilantro

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and bell pepper; cook for 3 minutes.
  4. Stir in black beans, kidney beans, diced tomatoes, vegetable broth, chili powder, and cumin.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
  7. Serve over cooked rice with your favorite toppings.

  • You can add other vegetables, such as corn or zucchini.
