Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 4 cups vegetable broth
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Cooked rice, for serving
- Optional toppings: avocado, sour cream, cilantro
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and bell pepper; cook for 3 minutes.
- Stir in black beans, kidney beans, diced tomatoes, vegetable broth, chili powder, and cumin.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
- Serve over cooked rice with your favorite toppings.
Notes
- Adjust the spices to your taste.
- You can add other vegetables, such as corn or zucchini.
- Leftovers are great the next day.
