A comforting beef dinner perfect for cold nights.
Ingredients
- Beef chuck roast: 2-3 pounds
- Onion: 1 large, chopped
- Carrots: 1 pound, peeled and chopped
- Celery: 2 stalks, chopped
- Beef broth: 4 cups
- Tomato paste: 2 tablespoons
- All-purpose flour: 2 tablespoons
- Olive oil: 1 tablespoon
- Garlic: 2 cloves, minced
- Dried thyme: 1 teaspoon
- Bay leaf: 1
- Salt and pepper: To taste
Instructions
- Season the beef with salt and pepper.
- Heat olive oil in a large pot or Dutch oven. Sear the beef on all sides. Remove and set aside.
- Add onions, carrots, and celery to the pot. Cook until softened.
- Stir in garlic, thyme, and tomato paste. Cook for 1 minute.
- Sprinkle flour over the vegetables. Cook for 1 minute.
- Pour in beef broth. Add the bay leaf.
- Return the beef to the pot.
- Bring to a simmer, then cover and cook in the oven at 325°F (160°C) for 3-4 hours, or until beef is tender.
- Remove the bay leaf. Season with salt and pepper.
- Serve hot.
Notes
- Serve with mashed potatoes or crusty bread.
- You can add other vegetables, such as mushrooms or potatoes.
- For a thicker sauce, you can make a slurry of cornstarch and water.
