- 2 lbs beef chuck, cut into 1-inch cubes
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large skillet. Sear beef cubes until browned on all sides.
- Transfer beef to the crockpot.
- Add onion, carrots, celery, and garlic to the crockpot.
- Pour in beef broth and Worcestershire sauce.
- Stir in thyme, rosemary, salt, and pepper.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until beef is tender.
- Serve hot.
Notes
- Serve with mashed potatoes or crusty bread.
- Adjust seasonings to your preference.
- For a thicker sauce, mix a tablespoon of cornstarch with a little cold water and stir into the crockpot during the last 30 minutes of cooking.
