Ingredients

  • 1 lb beef stew meat
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 lb potatoes, cubed
  • Salt and pepper to taste

Instructions

  1. Season beef with salt and pepper.
  2. Heat olive oil in a large pot. Brown beef in batches.
  3. Add onion, carrots, and celery. Cook until softened.
  4. Stir in garlic.
  5. Pour in beef broth and red wine. Add thyme, rosemary, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1.5 hours.
  7. Add potatoes and cook until tender, about 30 minutes.
  8. Remove bay leaf before serving.

Notes

  • Serve with crusty bread for dipping.
  • Adjust vegetables to your liking.
  • For a thicker stew, mix a little cornstarch with cold water and stir it in during the last 15 minutes of cooking.
