Ingredients

- 1 lb beef stew meat
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 1 lb potatoes, cubed
- Salt and pepper to taste
Instructions
- Season beef with salt and pepper.
- Heat olive oil in a large pot. Brown beef in batches.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic.
- Pour in beef broth and red wine. Add thyme, rosemary, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1.5 hours.
- Add potatoes and cook until tender, about 30 minutes.
- Remove bay leaf before serving.
Notes
- Serve with crusty bread for dipping.
- Adjust vegetables to your liking.
- For a thicker stew, mix a little cornstarch with cold water and stir it in during the last 15 minutes of cooking.
