- 1/4 cup orange juice
- 2 tablespoons honey
- 1 teaspoon fresh rosemary, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Arrange baguette slices on a baking sheet. Brush both sides with olive oil.
- Bake for 8-10 minutes, or until golden brown and crisp. Let cool.
- In a small saucepan, combine dried cranberries, orange juice, and honey.
- Cook over medium heat, stirring occasionally, until cranberries are plump and the mixture has thickened, about 5-7 minutes. Remove from heat and stir in chopped rosemary.
- Spread a layer of softened goat cheese onto each cooled crostini.
- Top the goat cheese with the cranberry mixture.
- Serve immediately.
