Description
A delicious and easy one-pot creamy chicken tortilla soup.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 4 cups chicken broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional)
- 2 cups cooked chicken, shredded
- 1 cup frozen corn
- Salt and pepper to taste
- 1/2 cup heavy cream
- Tortilla chips and toppings of your choice (avocado, sour cream, cilantro, etc.)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and bell pepper and cook for 3 minutes.
- Stir in diced tomatoes, chicken broth, chili powder, cumin, and cayenne pepper (if using). Bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add shredded chicken and corn. Season with salt and pepper. Cook until heated through.
- Stir in heavy cream.
- Serve hot with tortilla chips and your favorite toppings.
Notes
- Adjust spices to your taste.
- You can use rotisserie chicken for convenience.
- For a thicker soup, blend a portion of the soup before adding the chicken and corn.
