A delicious and easy one-pot creamy chicken tortilla soup.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 cups cooked chicken, shredded
  • 1 cup frozen corn
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • Tortilla chips and toppings of your choice (avocado, sour cream, cilantro, etc.)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and bell pepper and cook for 3 minutes.
  4. Stir in diced tomatoes, chicken broth, chili powder, cumin, and cayenne pepper (if using). Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Add shredded chicken and corn. Season with salt and pepper. Cook until heated through.
  7. Stir in heavy cream.
  8. Serve hot with tortilla chips and your favorite toppings.

Notes

  • Adjust spices to your taste.
  • You can use rotisserie chicken for convenience.
  • For a thicker soup, blend a portion of the soup before adding the chicken and corn.
