  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes. Cut them into 1-inch cubes.
  3. In a bowl, toss the potato cubes with olive oil, rosemary, thyme, garlic powder, salt, and pepper until evenly coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Bake for 25-30 minutes, or until the potatoes are tender and crispy, flipping them halfway through.
  6. Remove the baking sheet from the oven. Sprinkle the shredded cheddar cheese over the hot potato bites.
  7. Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
  8. Serve immediately.
