- 2 large Russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes. Cut them into 1-inch cubes.
- In a bowl, toss the potato cubes with olive oil, rosemary, thyme, garlic powder, salt, and pepper until evenly coated.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Bake for 25-30 minutes, or until the potatoes are tender and crispy, flipping them halfway through.
- Remove the baking sheet from the oven. Sprinkle the shredded cheddar cheese over the hot potato bites.
- Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
- Serve immediately.
Notes
- For extra crispiness, ensure the potatoes are dry before tossing with oil.
- You can add other herbs like chives or parsley.
- Experiment with different cheeses like mozzarella or Monterey Jack.
