Description
Tender chicken in a creamy Parmesan sauce, cooked in a crock pot, served without pasta.
Ingredients

- 2 lbs boneless, skinless chicken breasts
- 1 cup chicken broth
- 8 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken breasts in the crock pot.
- Pour in chicken broth.
- Season with salt, pepper, garlic powder, and onion powder.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- Shred the chicken with two forks.
- In a bowl, whisk together cream cheese, Parmesan cheese, and heavy cream.
- Stir the cream cheese mixture into the shredded chicken in the crock pot.
- Cook on low for another 15-20 minutes, or until the sauce is heated through and creamy.
- Garnish with fresh parsley before serving.
Notes
- For a thicker sauce, you can add a tablespoon of cornstarch mixed with a tablespoon of cold water at the end of the cooking time.
- Serve over cauliflower rice, zucchini noodles, or your favorite low-carb side.
