Description
This recipe makes a creamy and flavorful Cajun chicken pasta in your crock pot.
Ingredients

- 1.5 lbs chicken breasts, cut into 1-inch pieces
- 1 lb smoked sausage, sliced
- 1 large onion, chopped
- 1 bell pepper (any color), chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup Cajun seasoning
- 8 ounces pasta (penne or rotini)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken, sausage, onion, bell pepper, garlic, diced tomatoes, chicken broth, and Cajun seasoning in the crock pot.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- About 30 minutes before serving, stir in the heavy cream and cooked pasta.
- Season with salt and pepper to taste.
- Cook until heated through.
- Garnish with fresh parsley.
- Serve immediately.
Notes
- You can add more or less Cajun seasoning depending on your spice preference.
- For a thicker sauce, you can mix a tablespoon of cornstarch with a tablespoon of cold water and stir it in during the last 30 minutes of cooking.
- Leftovers can be stored in the refrigerator for up to 3 days.
