This Crockpot Chicken Corn Chowder is a creamy and hearty soup. It’s perfect for a comforting meal. The slow cooker does most of the work.

- 2 boneless, skinless chicken breasts
- 1 cup chopped yellow onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 4 cups chicken broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon garlic powder
- 2 cups frozen corn
- 1 cup milk
- 1/2 cup heavy cream
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
Instructions
- Place chicken breasts in the slow cooker.
- Add onion, celery, and carrots.
- Pour in chicken broth.
- Season with salt, pepper, thyme, and garlic powder.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken and shred it.
- Return shredded chicken to the slow cooker.
- Stir in frozen corn.
- In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk and heavy cream until smooth.
- Pour the milk mixture into the slow cooker.
- Stir well and cook for another 30 minutes, or until thickened.
- Serve hot.
Notes
- For a thicker chowder, use less broth or add more milk and cream.
- You can add cooked bacon bits as a garnish.
- Adjust seasonings to your preference.
