Description

This Crockpot Chicken Corn Chowder is a creamy and hearty soup. It’s perfect for a comforting meal. The slow cooker does most of the work.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder
  • 2 cups frozen corn
  • 1 cup milk
  • 1/2 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add onion, celery, and carrots.
  3. Pour in chicken broth.
  4. Season with salt, pepper, thyme, and garlic powder.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Remove chicken and shred it.
  7. Return shredded chicken to the slow cooker.
  8. Stir in frozen corn.
  9. In a small saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk and heavy cream until smooth.
  10. Pour the milk mixture into the slow cooker.
  11. Stir well and cook for another 30 minutes, or until thickened.
  12. Serve hot.

Notes

  • For a thicker chowder, use less broth or add more milk and cream.
  • You can add cooked bacon bits as a garnish.
