A simple and delicious cake featuring fresh peaches and brown sugar.
Ingredients

- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 3/4 cups packed brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup milk
- 3 cups fresh peaches, peeled and sliced
- Brown Sugar Glaze (recipe below)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together butter and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- Gradually add dry ingredients to wet ingredients, alternating with milk, beginning and ending with dry ingredients.
- Fold in sliced peaches.
- Pour batter into prepared pan.
- Bake for 30-40 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool completely before adding the Brown Sugar Glaze.
- Brown Sugar Glaze: Whisk together 1 cup powdered sugar, 1/4 cup brown sugar, 2-3 tablespoons milk, and 1/2 tsp vanilla extract until smooth.
Notes
- For best results, use ripe peaches.
- You can substitute canned peaches, drained, if fresh peaches are unavailable.
- Adjust baking time as needed.
- Store leftover cake in an airtight container at room temperature.
