This recipe guides you to make an easy and delicious crock pot pot roast with gravy.

- 3–4 lb chuck roast
- 1 tbsp olive oil
- 1 packet (1 ounce) dry onion soup mix
- 1 cup water
- 1 lb carrots, peeled and chopped
- 1 lb potatoes, peeled and quartered
- 1 tbsp cornstarch
- 1/4 cup cold water
Instructions
- Season the roast with salt and pepper.
- Heat olive oil in a skillet and sear the roast on all sides.
- Place the roast in the crock pot.
- Sprinkle onion soup mix over the roast.
- Pour in water.
- Add carrots and potatoes.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until the roast is tender.
- Remove the roast and vegetables from the crock pot.
- In a small bowl, whisk cornstarch and cold water.
- Pour the cornstarch mixture into the crock pot and cook on high for 15-20 minutes, or until the gravy thickens.
- Serve the roast and vegetables with gravy.
Notes
- You can add other vegetables like celery or parsnips.
- For a thicker gravy, use more cornstarch.
- If you don’t have onion soup mix, you can use a combination of onion powder, garlic powder, and beef bouillon.
