A simple and delicious crockpot meal featuring tender chicken, broccoli, and rice in a creamy, cheesy sauce. Perfect for a weeknight dinner.

- 1 pound boneless, skinless chicken breasts
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 cup chicken broth
- 1 cup uncooked white rice
- 1 cup broccoli florets
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Place chicken breasts in the bottom of your slow cooker.
- In a bowl, mix together cream of chicken soup and chicken broth. Pour over chicken.
- Stir in uncooked rice and broccoli florets. Season with salt and pepper.
- Cover and cook on low for 4-6 hours, or until chicken is cooked through and rice is tender.
- Remove chicken from slow cooker and shred. Return shredded chicken to the slow cooker.
- Stir in shredded cheddar cheese until melted and combined.
- Serve hot.
Notes
- You can use fresh or frozen broccoli.
- Adjust seasoning to your preference.
- For a thinner sauce, add a little more chicken broth.
