- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup chopped yellow onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 2 cups chicken broth
- 1 cup milk
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried rosemary
- 1 (10.5 ounce) can condensed cream of chicken soup
- 1 cup frozen peas
- 1 cup frozen corn
- 2 refrigerated pie crusts
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned. Remove chicken from skillet and set aside.
- Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes. Season with salt and pepper.
- Melt butter in the same skillet over medium heat. Whisk in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in chicken broth and milk until smooth. Bring to a simmer and cook, stirring, until thickened.
- Stir in thyme, rosemary, cream of chicken soup, peas, and corn. Return chicken to the skillet.
- Pour mixture into a greased 9×13 inch baking dish.
- Place one pie crust over the filling. Crimp edges to seal. Cut several slits in the top crust to allow steam to escape.
- Bake for 25-30 minutes, or until crust is golden brown and filling is bubbly.
Notes
- For a faster meal, you can use pre-cooked rotisserie chicken.
- If you prefer a thicker filling, you can add an extra tablespoon of flour.
- This casserole can be assembled ahead of time and baked later.
