Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 1 pound egg noodles
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups beef broth
  • 1/2 cup sour cream
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add beef and cook until browned. Remove beef and set aside.
  3. Add onion and mushrooms to the pot and cook until softened, about 5-7 minutes.
  4. Stir in garlic, salt, and pepper.
  5. Pour in beef broth and bring to a boil.
  6. Add egg noodles, stirring to combine.
  7. Return beef to the pot and reduce heat to low. Cover and simmer for 10-12 minutes, or until noodles are tender.
  8. Stir in sour cream until well combined.
  9. Garnish with fresh parsley before serving.

Notes

  • For a richer flavor, use heavy cream instead of sour cream.
  • Add a splash of Worcestershire sauce for extra depth.
