Description
A simple and comforting beef stroganoff made in one pot.
Ingredients

- 1 pound beef sirloin, thinly sliced
- 1 pound egg noodles
- 1 tablespoon olive oil
- 1 large onion, chopped
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups beef broth
- 1/2 cup sour cream
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add beef and cook until browned. Remove beef and set aside.
- Add onion and mushrooms to the pot and cook until softened, about 5-7 minutes.
- Stir in garlic, salt, and pepper.
- Pour in beef broth and bring to a boil.
- Add egg noodles, stirring to combine.
- Return beef to the pot and reduce heat to low. Cover and simmer for 10-12 minutes, or until noodles are tender.
- Stir in sour cream until well combined.
- Garnish with fresh parsley before serving.
Notes
- For a richer flavor, use heavy cream instead of sour cream.
- Add a splash of Worcestershire sauce for extra depth.
