Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup long-grain rice
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Season chicken with salt and pepper.
  3. Add chicken to the pot and cook until browned on all sides. Remove and set aside.
  4. Add onion and bell pepper to the pot and cook until softened, about 5 minutes.
  5. Stir in garlic, cook for 1 minute.
  6. Add diced tomatoes, chicken broth, rice, smoked paprika, and garlic powder. Season with salt and pepper.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender.
  8. Return chicken to the pot and heat through.
  9. Garnish with fresh parsley. Serve hot.

Notes

  • You can substitute chicken breasts for thighs. Adjust cooking time as needed.
  • Add a pinch of cayenne pepper for extra heat.
  • Feel free to add other vegetables like corn or peas.
