A simple and delicious one-pot Southern-style meal.

- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup long-grain rice
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Season chicken with salt and pepper.
- Add chicken to the pot and cook until browned on all sides. Remove and set aside.
- Add onion and bell pepper to the pot and cook until softened, about 5 minutes.
- Stir in garlic, cook for 1 minute.
- Add diced tomatoes, chicken broth, rice, smoked paprika, and garlic powder. Season with salt and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender.
- Return chicken to the pot and heat through.
- Garnish with fresh parsley. Serve hot.
Notes
- You can substitute chicken breasts for thighs. Adjust cooking time as needed.
- Add a pinch of cayenne pepper for extra heat.
- Feel free to add other vegetables like corn or peas.
