- 1 tablespoon olive oil
- 1 pound ground beef or lamb
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- 2 pounds potatoes, peeled and quartered
- 1/2 cup milk
- 4 tablespoons butter
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground meat and cook, breaking it up, until browned. Drain off excess fat.
- Add chopped onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Sprinkle flour over the meat and vegetable mixture and stir to combine. Cook for 1 minute.
- Gradually pour in beef broth and Worcestershire sauce, stirring constantly. Bring to a simmer and cook until the sauce thickens, about 5 minutes.
- Stir in thyme, salt, and pepper. Remove from heat.
- While the meat mixture simmers, boil the potatoes in salted water until tender. Drain well.
- Mash the potatoes with milk, butter, salt, and pepper until smooth and creamy.
- If using cheese, stir it into the mashed potatoes.
- Spread the mashed potato topping evenly over the meat mixture in the skillet.
- Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
- Let stand for a few minutes before serving.
Notes
- You can substitute ground lamb for ground beef for a more traditional Shepherd’s Pie.
- For a richer flavor, use a mix of beef broth and red wine.
- Add frozen peas or corn to the meat filling for extra vegetables.
- A sprinkle of fresh parsley on top adds a nice finish.
