  • 1 pound ground beef or lamb
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 pounds potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground meat and cook, breaking it up, until browned. Drain off excess fat.
  3. Add chopped onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Sprinkle flour over the meat and vegetable mixture and stir to combine. Cook for 1 minute.
  6. Gradually pour in beef broth and Worcestershire sauce, stirring constantly. Bring to a simmer and cook until the sauce thickens, about 5 minutes.
  7. Stir in thyme, salt, and pepper. Remove from heat.
  8. While the meat mixture simmers, boil the potatoes in salted water until tender. Drain well.
  9. Mash the potatoes with milk, butter, salt, and pepper until smooth and creamy.
  10. If using cheese, stir it into the mashed potatoes.
  11. Spread the mashed potato topping evenly over the meat mixture in the skillet.
  12. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
  13. Let stand for a few minutes before serving.

  • You can substitute ground lamb for ground beef for a more traditional Shepherd’s Pie.
