Ingredients

  • 2 lbs beef chuck roast
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

  1. Season beef with salt and pepper.
  2. Heat olive oil in a pan and sear beef on all sides.
  3. Place onion, carrots, and celery in slow cooker.
  4. Place seared beef on top of vegetables.
  5. Add garlic, beef broth, Worcestershire sauce, thyme, and rosemary.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. Shred beef with two forks.
  8. Serve and enjoy!

Notes

  • You can add potatoes to the slow cooker during the last 2 hours of cooking.
  • For a thicker sauce, mix a tablespoon of cornstarch with water and stir into the slow cooker during the last 30 minutes of cooking.
