Tender and flavorful slow cooker beef dinner, perfect for family meals.
Ingredients

- 2 lbs beef chuck roast
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Season beef with salt and pepper.
- Heat olive oil in a pan and sear beef on all sides.
- Place onion, carrots, and celery in slow cooker.
- Place seared beef on top of vegetables.
- Add garlic, beef broth, Worcestershire sauce, thyme, and rosemary.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Shred beef with two forks.
- Serve and enjoy!
Notes
- You can add potatoes to the slow cooker during the last 2 hours of cooking.
- For a thicker sauce, mix a tablespoon of cornstarch with water and stir into the slow cooker during the last 30 minutes of cooking.
