Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup shredded Parmesan cheese

Instructions

  1. Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add sliced onion to the skillet and cook, stirring occasionally, until softened and lightly caramelized, about 10-15 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  6. Stir in orzo, thyme, salt, and pepper. Bring to a simmer.
  7. Return the browned chicken to the skillet.
  8. Cover the skillet and transfer to a preheated oven at 375°F (190°C).
  9. Bake for 15-20 minutes, or until the orzo is tender and most of the liquid has been absorbed.
  10. Remove the lid, sprinkle the Gruyere and Parmesan cheeses over the top.
  11. Bake uncovered for another 5-7 minutes, or until the cheese is melted and bubbly.
  12. Let rest for 5 minutes before serving.

  • For a deeper onion flavor, caramelize the onions slowly over low heat.
  • Feel free to add other vegetables like mushrooms or spinach.
