Description
A refreshing and healthy pasta salad with fresh broccoli.
Ingredients
- Pasta (cooked) – 2 cups
- Fresh Broccoli florets – 2 cups
- Cherry tomatoes (halved) – 1 cup
- Red onion (thinly sliced) – 1/2 cup
- Feta cheese (crumbled) – 1/2 cup
- Olive oil – 1/4 cup
- Lemon juice – 2 tbsp
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- Steam broccoli florets until tender-crisp.
- In a large bowl, combine pasta, broccoli, tomatoes, red onion, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Chill for at least 30 minutes before serving.
Notes
- You can add grilled chicken or chickpeas for extra protein.
- Feel free to substitute other vegetables like bell peppers or cucumbers.
- Adjust the dressing to your taste.
