Description

A refreshing and healthy pasta salad with fresh broccoli.


Ingredients

  • Pasta (cooked) – 2 cups
  • Fresh Broccoli florets – 2 cups
  • Cherry tomatoes (halved) – 1 cup
  • Red onion (thinly sliced) – 1/2 cup
  • Feta cheese (crumbled) – 1/2 cup
  • Olive oil – 1/4 cup
  • Lemon juice – 2 tbsp
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. Steam broccoli florets until tender-crisp.
  3. In a large bowl, combine pasta, broccoli, tomatoes, red onion, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over salad and toss to combine.
  6. Chill for at least 30 minutes before serving.
