Description

Ingredients

  • 1 teaspoon baking soda

  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon

  • 1/4 teaspoon ground nutmeg
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1/2 cup unsulfured molasses
  • 1 teaspoon vanilla extract
  • For decorating: Icing, sprinkles, candy

Instructions

  1. Whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg in a medium bowl.
  2. Cream butter and brown sugar in a large bowl until light and fluffy.
  3. Beat in egg, molasses, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 2 hours.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out dough to 1/4-inch thickness.
  8. Cut out shapes using cookie cutters.
  9. Place cookies on prepared baking sheets, about 1 inch apart.
  10. Bake for 8-10 minutes, or until edges are golden brown.
  11. Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  12. Decorate as desired once cooled.
