Ingredients
- Chicken breasts (4)
- Olive oil (2 tbsp)
- Lemon juice (2 tbsp)
- Dried oregano (1 tsp)
- Dried thyme (1 tsp)
- Salt (to taste)
- Black pepper (to taste)
- Cucumber (1, diced)
- Cherry tomatoes (1 cup, halved)
- Red onion (1/2, thinly sliced)
- Kalamata olives (1/2 cup)
- Cooked quinoa (2 cups)
- Feta cheese (optional, 1/4 cup)
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken with olive oil, lemon juice, oregano, thyme, salt, and pepper.
- Bake chicken for 20-25 minutes, or until cooked through.
- While chicken cooks, prepare the vegetables.
- Once chicken is cooked, let it rest, then slice or dice.
- Assemble bowls with quinoa, chicken, vegetables, and feta (if using).
Notes
- Feel free to add other vegetables, like bell peppers.
- You can grill the chicken instead of baking it.
- For a vegan option, skip the chicken and feta. Add chickpeas.
