A lighter take on classic Alfredo pasta with chicken.
Ingredients
- Chicken breast (4 oz)
- Whole wheat pasta (2 cups cooked)
- Broccoli florets (1 cup)
- Garlic (2 cloves)
- Olive oil (1 tbsp)
- Plain Greek yogurt (1/2 cup)
- Parmesan cheese (2 tbsp)
- Milk (1/4 cup)
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions.
- Cook chicken in olive oil until done. Season with salt and pepper.
- Sauté garlic and broccoli.
- Whisk together yogurt, milk, and parmesan.
- Combine all ingredients.
- Serve immediately.
Notes
- Add red pepper flakes for heat.
- Use rotisserie chicken for speed.
- Vary vegetables as you like.
