Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened.
  3. Add garlic and bell pepper; cook for 3 minutes.
  4. Stir in black beans, kidney beans, and pinto beans.
  5. Pour in vegetable broth, add smoked paprika, and cayenne pepper (if using). Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
  7. Serve over cooked rice. Garnish with fresh cilantro.
