A comforting and flavorful bean dinner inspired by Southern cooking.
Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 4 cups vegetable broth
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- Salt and pepper to taste
- Cooked rice, for serving
- Fresh cilantro, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened.
- Add garlic and bell pepper; cook for 3 minutes.
- Stir in black beans, kidney beans, and pinto beans.
- Pour in vegetable broth, add smoked paprika, and cayenne pepper (if using). Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
- Serve over cooked rice. Garnish with fresh cilantro.
Notes
- Adjust spices to your preference.
- You can add cooked sausage or ham for extra flavor.
- Leftovers are great the next day.
