  • 1 (15 ounce) can corn, drained
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Shredded cheese for topping (optional)
  • Sour cream for topping (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add ground beef and cook, breaking it up, until browned. Drain any excess grease.
  3. Add onion and garlic and cook until softened, about 5 minutes.
  4. Stir in crushed tomatoes, kidney beans, corn, chili powder, and cumin. Season with salt and pepper.
  5. Bring to a simmer, then reduce heat and cover. Cook for at least 20 minutes, or longer for a richer flavor.
  6. Serve hot, topped with shredded cheese and sour cream, if desired.
