- 1 tbsp olive oil
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Shredded cheese for topping (optional)
- Sour cream for topping (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add ground beef and cook, breaking it up, until browned. Drain any excess grease.
- Add onion and garlic and cook until softened, about 5 minutes.
- Stir in crushed tomatoes, kidney beans, corn, chili powder, and cumin. Season with salt and pepper.
- Bring to a simmer, then reduce heat and cover. Cook for at least 20 minutes, or longer for a richer flavor.
- Serve hot, topped with shredded cheese and sour cream, if desired.
Notes
- Feel free to add other vegetables, such as bell peppers or carrots.
- For a vegetarian option, substitute the ground beef with a plant-based alternative or more beans.
