Ingredients

  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked, shredded chicken
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and bring to a simmer.
  5. Add shredded chicken, peas, and corn.
  6. In a small bowl, whisk together milk and flour until smooth.
  7. Gradually whisk the milk mixture into the simmering soup.
  8. Cook, stirring occasionally, until the soup has thickened, about 5-10 minutes.
  9. Season with salt and pepper to taste.
  10. Serve hot.
