A comforting high-protein turkey dinner.
Ingredients

- 1.5 lbs turkey breast
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 lb green beans
Instructions
- Preheat oven to 375°F (190°C).
- Season turkey with salt and pepper.
- Heat oil in a pan, sear turkey.
- Add onion, carrots, and celery. Cook until softened.
- Pour in broth, add thyme.
- Bake turkey until cooked through.
- Add green beans during the last 15 minutes of cooking.
- Let turkey rest before slicing.
Notes
- Serve with a side of quinoa or brown rice.
- Add other vegetables like potatoes.
