Instructions
- Preheat your oven to 400°F (200°C).
- Toss the sweet potato rounds with olive oil, salt, and pepper on a baking sheet.
- Arrange the rounds in a single layer.
- Bake for 20-25 minutes, or until tender and lightly browned.
- Remove from oven and sprinkle crumbled feta cheese over each round.
- Drizzle with honey.
- Return to the oven for 5 more minutes, or until the feta is softened.
