Quick and easy bean meal cooked in an Instant Pot.
Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp smoked paprika
- 1 cup dried beans, rinsed
- 4 cups vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- Optional toppings: avocado, cilantro, lime wedges
Instructions
- Turn Instant Pot to sauté mode. Add olive oil.
- Sauté onion until softened. Add garlic, cumin, chili powder, and smoked paprika. Cook for 1 minute.
- Add beans, vegetable broth, and bay leaf. Season with salt and pepper.
- Close and seal the Instant Pot. Cook on high pressure for 35 minutes.
- Allow natural pressure release for 15 minutes, then quick release remaining pressure.
- Remove bay leaf. Serve with desired toppings.
Notes
- Soaking beans overnight is optional.
- Adjust spices to your preference.
- Serve with your favorite toppings.
