Description

Quick and easy bean meal cooked in an Instant Pot.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1 cup dried beans, rinsed
  • 4 cups vegetable broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, lime wedges

Instructions

  1. Turn Instant Pot to sauté mode. Add olive oil.
  2. Sauté onion until softened. Add garlic, cumin, chili powder, and smoked paprika. Cook for 1 minute.
  3. Add beans, vegetable broth, and bay leaf. Season with salt and pepper.
  4. Close and seal the Instant Pot. Cook on high pressure for 35 minutes.
  5. Allow natural pressure release for 15 minutes, then quick release remaining pressure.
  6. Remove bay leaf. Serve with desired toppings.

  • Soaking beans overnight is optional.
  • Adjust spices to your preference.
