Ingredients

  • 1/4 cup ice water
  • 1 lemon, zested and juiced
  • 1/2 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/4 cup water
  • 2 cups fresh blueberries

Instructions

  1. Make the crust: Whisk flour, sugar, and salt. Cut in butter until crumbly. Add ice water and mix until dough forms.
  2. Chill the dough: Flatten dough, wrap, and chill for 30 minutes.
  3. Preheat and roll: Preheat oven to 375°F (190°C). Roll out dough and place in tart pan.
  4. Blind bake: Bake crust for 15 minutes.
  5. Make the filling: Whisk lemon zest, juice, sugar, and cornstarch. Add water and cook until thickened.
  6. Assemble: Pour filling into crust. Top with blueberries.
  7. Bake: Bake for 20 minutes.
  8. Cool and serve: Let cool completely before serving.
