A refreshing lemon blueberry tart. It is a delicious dessert.

- 1 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1/4 cup ice water
- 1 lemon, zested and juiced
- 1/2 cup granulated sugar
- 3 tablespoons cornstarch
- 1/4 cup water
- 2 cups fresh blueberries
Instructions
- Make the crust: Whisk flour, sugar, and salt. Cut in butter until crumbly. Add ice water and mix until dough forms.
- Chill the dough: Flatten dough, wrap, and chill for 30 minutes.
- Preheat and roll: Preheat oven to 375°F (190°C). Roll out dough and place in tart pan.
- Blind bake: Bake crust for 15 minutes.
- Make the filling: Whisk lemon zest, juice, sugar, and cornstarch. Add water and cook until thickened.
- Assemble: Pour filling into crust. Top with blueberries.
- Bake: Bake for 20 minutes.
- Cool and serve: Let cool completely before serving.
Notes
- You can use store-bought tart crust.
- Add a glaze for extra flavor.
