  • 1 packet taco seasoning
  • 1 cup water
  • 1 cup shredded cheddar cheese (or dairy-free alternative)
  • Your favorite taco toppings: lettuce, tomatoes, onions, sour cream/yogurt, salsa, avocado

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, chili powder, cumin, salt, and pepper.
  3. Roast potatoes for 25-30 minutes, or until golden and tender.
  4. While potatoes roast, brown ground meat in a skillet.
  5. Drain any excess grease.
  6. Add taco seasoning and water; simmer until thickened.
