Ingredients

- 2 lbs russet potatoes, peeled and diced

- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- 1 lb ground beef or turkey (or plant-based alternative)
- 1 packet taco seasoning
- 1 cup water
- 1 cup shredded cheddar cheese (or dairy-free alternative)
- Your favorite taco toppings: lettuce, tomatoes, onions, sour cream/yogurt, salsa, avocado
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, chili powder, cumin, salt, and pepper.
- Roast potatoes for 25-30 minutes, or until golden and tender.
- While potatoes roast, brown ground meat in a skillet.
- Drain any excess grease.
- Add taco seasoning and water; simmer until thickened.
- Assemble bowls: Layer potatoes, meat, cheese, and toppings.
