Ingredients

  • Turkey breast (1.5 kg)
  • Olive oil (2 tbsp)
  • Salt (1 tsp)
  • Black pepper (0.5 tsp)
  • Onion (1, chopped)
  • Carrots (2, chopped)
  • Celery (2 stalks, chopped)
  • Chicken broth (4 cups)
  • Potatoes (1 kg, peeled and quartered)
  • Green beans (500g, trimmed)

Instructions

  1. Preheat oven to 180°C.
  2. Rub turkey with oil, salt, and pepper.
  3. Sear turkey in a pan.
  4. Add onion, carrots, and celery to the pan. Cook until softened.
  5. Place vegetables in a roasting pan.
  6. Place turkey on top.
  7. Pour in chicken broth.
  8. Roast for 1.5-2 hours, or until turkey is cooked.
  9. Let cool. Shred turkey.
  10. Place potatoes and green beans in the pan.
  11. Store turkey and vegetables separately.
  12. Reheat turkey and vegetables before serving.
