Description
Prepare a delicious turkey dinner in advance. Reheat it for stress-free weeknight meals.
Ingredients
- Turkey breast (1.5 kg)
- Olive oil (2 tbsp)
- Salt (1 tsp)
- Black pepper (0.5 tsp)
- Onion (1, chopped)
- Carrots (2, chopped)
- Celery (2 stalks, chopped)
- Chicken broth (4 cups)
- Potatoes (1 kg, peeled and quartered)
- Green beans (500g, trimmed)
Instructions
- Preheat oven to 180°C.
- Rub turkey with oil, salt, and pepper.
- Sear turkey in a pan.
- Add onion, carrots, and celery to the pan. Cook until softened.
- Place vegetables in a roasting pan.
- Place turkey on top.
- Pour in chicken broth.
- Roast for 1.5-2 hours, or until turkey is cooked.
- Let cool. Shred turkey.
- Place potatoes and green beans in the pan.
- Store turkey and vegetables separately.
- Reheat turkey and vegetables before serving.
