A simple and flavorful meal featuring tender maple Dijon chicken served over roasted sweet potatoes, perfect for a healthy and satisfying dinner.

- 1.5 lbs boneless, skinless chicken thighs
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1/4 cup Dijon mustard
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potato cubes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
- While sweet potatoes are roasting, whisk together Dijon mustard, maple syrup, apple cider vinegar, thyme, salt, and pepper in a bowl.
- Add chicken thighs to the bowl and toss to coat evenly with the marinade.
- Add chicken to the baking sheet with the sweet potatoes during the last 15 minutes of roasting. Cook until chicken is cooked through and no longer pink in the center.
- Serve the maple Dijon chicken and roasted sweet potatoes in bowls.
Notes
- For extra flavor, add a pinch of red pepper flakes to the marinade.
- You can substitute chicken breast for thighs if preferred, but adjust cooking time as needed.
- Serve with a side of steamed broccoli or a fresh green salad for a complete meal.
