Description

A simple and flavorful meal featuring tender maple Dijon chicken served over roasted sweet potatoes, perfect for a healthy and satisfying dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup Dijon mustard
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
  3. While sweet potatoes are roasting, whisk together Dijon mustard, maple syrup, apple cider vinegar, thyme, salt, and pepper in a bowl.
  4. Add chicken thighs to the bowl and toss to coat evenly with the marinade.
  5. Add chicken to the baking sheet with the sweet potatoes during the last 15 minutes of roasting. Cook until chicken is cooked through and no longer pink in the center.
  6. Serve the maple Dijon chicken and roasted sweet potatoes in bowls.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the marinade.
  • You can substitute chicken breast for thighs if preferred, but adjust cooking time as needed.
