- 1 cup gluten-free rolled oats
- 1/2 cup pecan flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted (or dairy-free butter)
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, whisk together oats, pecan flour, baking soda, and salt.
- In a separate bowl, whisk maple syrup, melted coconut oil (or butter), and vanilla.
- Combine wet and dry ingredients.
- Stir in chopped pecans.
- Drop by rounded tablespoons onto a baking sheet.
- Bake for 10-12 minutes, or until golden.
- Let cool on the baking sheet.

- Adjust sweetness to your liking.
