Ingredients
- Chicken breast (4 oz)
- Cucumber (1/2 cup, diced)
- Cherry tomatoes (1/2 cup, halved)
- Red onion (1/4 cup, thinly sliced)
- Kalamata olives (1/4 cup, pitted)
- Feta cheese (2 oz, crumbled)
- Cooked quinoa (1 cup)
- Lemon juice (2 tbsp)
- Olive oil (1 tbsp)
- Dried oregano (1 tsp)
- Salt and pepper to taste
Instructions
- Cook the chicken breast. You can grill, bake, or pan-fry it.
- While the chicken cooks, prepare the vegetables.
- In a bowl, combine quinoa, cucumber, tomatoes, red onion, olives, and feta.
- Slice the cooked chicken.
- In a small bowl, whisk together lemon juice, olive oil, oregano, salt, and pepper.
- Add the chicken to the bowl with the vegetables and quinoa.
- Drizzle with the lemon dressing.
