A flavorful Mediterranean-inspired egg bake with fresh herbs.
Ingredients
Scale
- 6 large eggs
- 1/4 cup milk
- 1/4 cup crumbled feta cheese
- 1/4 cup chopped fresh herbs (parsley, dill, oregano)
- 1/4 cup chopped red onion
- 1/4 cup chopped bell pepper
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Whisk eggs, milk, salt, and pepper.
- Sauté onion and bell pepper in olive oil.
- Add herbs and feta to the egg mixture.
- Pour egg mixture into a greased baking dish.
- Bake for 20-25 minutes, or until set.
- Let cool slightly before serving.

- Feel free to add other vegetables.
- Serve with a side of whole-wheat toast.
