Ingredients

  • 1 cup lemon curd
  • 3 egg whites
  • 1/2 cup granulated sugar
  • Purple food coloring

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Fill each tart shell with lemon curd.
  3. In a clean bowl, beat egg whites until soft peaks form.
  4. Gradually add sugar, beating until stiff, glossy peaks form.
  5. Add a few drops of purple food coloring and mix.
  6. Spoon or pipe meringue onto the lemon curd.
  7. Bake for 8-10 minutes, or until meringue is lightly golden.
  8. Let cool completely before serving.
