These mini lemon tarts with lilac meringue are a delightful treat.
Ingredients

- 1 package of pre-made mini tart shells
- 1 cup lemon curd
- 3 egg whites
- 1/2 cup granulated sugar
- Purple food coloring
Instructions
- Preheat your oven to 350°F (175°C).
- Fill each tart shell with lemon curd.
- In a clean bowl, beat egg whites until soft peaks form.
- Gradually add sugar, beating until stiff, glossy peaks form.
- Add a few drops of purple food coloring and mix.
- Spoon or pipe meringue onto the lemon curd.
- Bake for 8-10 minutes, or until meringue is lightly golden.
- Let cool completely before serving.
Notes
- You can make your own tart shells and lemon curd.
- Adjust the food coloring to your desired shade.
- Store leftover tarts in the refrigerator.
