Ingredients

  • 1.5 lbs turkey breast, cut into 1-inch cubes
  • 1 lb small red potatoes, quartered
  • 1 large onion, cut into wedges
  • 1 cup carrots, chopped
  • 1/2 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss turkey, potatoes, onion, and carrots with olive oil, rosemary, thyme, salt, and pepper on a large baking sheet.
  3. Pour chicken broth over the ingredients.
  4. Bake for 35-40 minutes, or until turkey is cooked through and vegetables are tender.
  5. Let it rest for 5 minutes before serving.
