A simple one-pan turkey dinner with big flavor.
Ingredients

- 1.5 lbs turkey breast, cut into 1-inch cubes
- 1 lb small red potatoes, quartered
- 1 large onion, cut into wedges
- 1 cup carrots, chopped
- 1/2 cup chicken broth
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss turkey, potatoes, onion, and carrots with olive oil, rosemary, thyme, salt, and pepper on a large baking sheet.
- Pour chicken broth over the ingredients.
- Bake for 35-40 minutes, or until turkey is cooked through and vegetables are tender.
- Let it rest for 5 minutes before serving.
Notes
- You can add other vegetables like bell peppers or broccoli.
- Adjust cooking time based on your oven.
