A simple and delicious one-pot meal featuring savory sausage, tender orzo pasta, and a rich garlic butter sauce. This dish is perfect for a quick weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage (like kielbasa), sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups orzo pasta
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced sausage and cook until browned on both sides. Remove sausage from the pot and set aside.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the orzo pasta to the pot and stir to coat with the drippings.
  5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed.
  6. Stir in the heavy cream, Parmesan cheese, and cooked sausage.
  7. Cook for another 2-3 minutes, stirring, until the sauce has thickened and the sausage is heated through.
  8. Stir in the fresh parsley. Season with salt and pepper to taste.
  9. Serve hot.

Notes

  • You can use any type of smoked sausage you prefer.
  • For a spicier dish, add a pinch of red pepper flakes with the garlic.
  • If you don’t have chicken broth, vegetable broth can be used.
