A hearty and healthy soup version of lasagna, packed with protein and vegetables.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 4 cups beef broth
- 1 (15 ounce) can tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 9 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
Instructions
- Brown ground beef in a large pot or Dutch oven. Drain off any grease.
- Add onion and garlic and cook until softened.
- Stir in crushed tomatoes, beef broth, tomato sauce, oregano, basil, salt, and pepper. Bring to a boil.
- Add broken lasagna noodles and cook until tender, about 15-20 minutes.
- Stir in ricotta cheese and mozzarella cheese.
- Garnish with fresh parsley.
Notes
- You can substitute ground turkey or chicken for ground beef.
- Add vegetables like carrots, celery, or zucchini for extra nutrients.
- Adjust seasonings to your preference.
