Description

A hearty and healthy soup version of lasagna, packed with protein and vegetables.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups beef broth
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 9 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Brown ground beef in a large pot or Dutch oven. Drain off any grease.
  2. Add onion and garlic and cook until softened.
  3. Stir in crushed tomatoes, beef broth, tomato sauce, oregano, basil, salt, and pepper. Bring to a boil.
  4. Add broken lasagna noodles and cook until tender, about 15-20 minutes.
  5. Stir in ricotta cheese and mozzarella cheese.
  6. Garnish with fresh parsley.

  • You can substitute ground turkey or chicken for ground beef.
  • Add vegetables like carrots, celery, or zucchini for extra nutrients.
