Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 1/2 cups eggnog
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. Bake for 10 minutes. Remove from oven and let cool.
  4. In a large bowl, beat cream cheese until smooth. Gradually beat in 1 cup sugar, flour, cinnamon, nutmeg, and cloves.
  5. Beat in eggnog and vanilla extract. Add eggs one at a time, beating just until combined after each addition.
  6. Pour filling over the prepared crust.
  7. Bake for 50-60 minutes, or until the center is almost set.
  8. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  9. Remove from oven and let cool completely on a wire rack.
  10. Chill in the refrigerator for at least 4 hours, or preferably overnight.

  • For a smoother crust, you can pulse graham crackers in a food processor.
  • Ensure cream cheese is at room temperature for best results.
  • Do not overmix the batter once eggs are added.
