Simple and fast chicken and veggie rice bowls. A complete and healthy meal.


Ingredients

Scale
  • 1 lb chicken breast, diced
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup broccoli florets
  • 1 cup cooked rice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Cook rice according to package directions.
  2. Heat olive oil in a pan.
  3. Cook chicken until browned.
  4. Add onion and bell pepper; cook until softened.
  5. Stir in broccoli; cook until tender-crisp.
  6. Mix soy sauce and honey.
  7. Pour sauce over chicken and veggies.
  8. Simmer for a few minutes.
  9. Serve over rice.
