Simple and fast chicken and veggie rice bowls. A complete and healthy meal.
Ingredients

- 1 lb chicken breast, diced
- 1 tbsp olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 cup broccoli florets
- 1 cup cooked rice
- 2 tbsp soy sauce
- 1 tbsp honey
- Salt and pepper to taste
Instructions
- Cook rice according to package directions.
- Heat olive oil in a pan.
- Cook chicken until browned.
- Add onion and bell pepper; cook until softened.
- Stir in broccoli; cook until tender-crisp.
- Mix soy sauce and honey.
- Pour sauce over chicken and veggies.
- Simmer for a few minutes.
- Serve over rice.

- Add other veggies you like.
- Use brown rice for extra fiber.
- Adjust sauce to your taste.
