Description
Easy set-it-and-forget-it beef dinner.
Ingredients

- 2 lbs beef chuck roast
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
Instructions
- Season beef with salt and pepper.
- Heat oil in a pot. Sear beef on all sides.
- Add onion, carrots, and celery. Cook until softened.
- Pour in beef broth and add bay leaf.
- Place beef in a slow cooker.
- Cook on low for 6-8 hours, or until tender.
- Shred the beef and serve.
Notes
- Serve with mashed potatoes or rice.
- Add potatoes to the slow cooker for the last 2 hours.
