Easy set-it-and-forget-it beef dinner.


Ingredients

  • 2 lbs beef chuck roast
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf

Instructions

  1. Season beef with salt and pepper.
  2. Heat oil in a pot. Sear beef on all sides.
  3. Add onion, carrots, and celery. Cook until softened.
  4. Pour in beef broth and add bay leaf.
  5. Place beef in a slow cooker.
  6. Cook on low for 6-8 hours, or until tender.
  7. Shred the beef and serve.

Notes

  • Serve with mashed potatoes or rice.
  • Add potatoes to the slow cooker for the last 2 hours.
